My time at A Rocha Farm

SOUP-ER SUSTAINABLE FARMS!

Hey guys! So recently I was able to visit A Rocha farms near my city and explore the farms around my city a little more. A Rocha is teeming with life even if it’s microscopic! They grow all their crops and animals in systems that are sustainable on their own, so they don’t ever need to use chemicals to grow their crops. The crops are able to retain more of their own healthy nutrients due to the lack of harmful chemicals which benefit us greatly. Most of these farms aren’t able to sell their produce in convenient places like superstores and so there are many ways they’ve adapted around that. Things like farmers markets are helpful for them and they also sell premade veggie boxes to committed families that pay at the beginning of the year. This allows the farmers to have a steady income and allows the families to consistently get healthy fresh crops. Right before we left, we were able to snatch a lot of the veggies to take back to make soups and stews with. I decided on making a potato leek soup just because the potatoes were beautifully purple, and the leeks were so fresh smelling it was irresistible. When we blended our soup together the purple color of the potatoes was lost in the yellow of the broth unfortunately and so it turned out a little on the less aesthetic side of things. Nonetheless, the soup was amazing and had a little kick to it as we decided on adding a Thai chili to heat things up. Potato Leek Soup 

Ingredients:

  • 1/2 Onion

  • 1 Leek

  • 3 Potatoes

  • 1 Clove of Garlic

  • 1 Celery stick

  • 3 Cups of broth

  • 1 Thai Chili

  • 1/2 cup of Heavy Cream

  • Salt & Pepper

  • Oil

Steps

  1. Prepare all veggies

  2. Saute onions, leek, and celery until they start to sweat. Then add the garlic. Salt to taste.

  3. Add the broth along with the chili and bring to a boil

  4. Add heavy cream and potatoes and let it boil until potatoes are soft

  5. Pour into a blender and blend until smooth and creamy

  6. Enjoy!
